Ingredients

  • 6 oz cooked chicken breast, diced or shredded (Protein)

  • 1 cup cooked quinoa (Complex Carbohydrates & Complete Protein)

  • 2 cups cherry tomatoes, cut in half (Lycopene & Micronutrients)

  • 4 cloves garlic, chopped small

  • 1/2 red onion, sliced

  • 1.5 tablespoons extra virgin olive oil (Healthy Monounsaturated Fats)

  • 2 tablespoons raw pumpkin seeds / pepitas (Zinc & Essential Fats)

  • 2 cups fresh baby spinach (Fiber & Micronutrients)

  • A pinch of salt and black pepper


Easy Steps to Make

  1. Heat the Oven: Set the oven to 400°F.

  2. Roast the Veggies: Place the cut tomatoes, onion, and garlic on a baking tray. Add 1 tablespoon of olive oil, a pinch of salt, and pepper. Toss well. Bake for 20 to 25 minutes until soft.
